* 3 liters of water
* 6 large spring onions
* 2 medium green peppers
* 3 medium carrots
* 10 oz. of mushrooms
* 1 bunch of celery
* 1 small cabbage
* 10-12 tsp bouillon powder
* Season to taste with salt, pepper, parsley, curry, garlic powder, etc.
How to prepare:
Cut spring onions, put it in a pot and start to saute with cooking spray or 1 tsp. of extra virgin olive oil. Cut green peppers in half, take the seeds out and cut the green peppers into small size pieces and add them to the pot.
Discard the outer parts of the cabbage, cut the cabbage in thin pieces and add it to your pot. Cut carrots and mushrooms into small cubes and add them to the pot to saute with the rest of the ingredients for 5-7 minutes. Dissolve the bouillon powder with water and add it to the vegetables in the pot. Add salt and pepper for your taste. Cover the pot and let the soup to steam on low heat for about 2 hours. When soup is cooked add any spice of your choice to the soup such as curry, thyme, garlic powder, parsley etc. You can eat soup as it is, but it can also be prepared as a purée. Cabbage soup tastes good warm or chilled. Bon appetite!
