How to Make Scandinavian Pork Soup in a Crockpot
This thick, warming soup recipe combines salt pork with vegetables, hot dogs, and herbs. This makes a wonderful dinner on a cool evening and this recipe serves eight people. You can make this delicious Scandinavian soup recipe in a crockpot.
What you will need:

  • 1 lb split peas
  • 1 chopped onion
  • 1/2 lb lean salt pork
  • 6 cups boiling water
  • 1 lb chopped hot dogs or smokies
  • 3 sliced carrots
  • 1 sliced leek
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • Chopped fresh parsley, to garnish

How to make it:Rinse the peas under running water, and then add them to the crockpot. Pour the boiling water over them, put the lid on, and let them stand in the hot water for an hour. Score the salt pork and add it to the crockpot, nestling it down amongst the peas. Next, add the leek, onion, carrots, hot dogs, thyme, salt and pepper.
Cover the crockpot and cook the soup on high for five hours or low for ten hours, stirring halfway through the cooking time. Ladle the soup into serving bowls and sprinkle the parsley over the top.
