Baked Vanilla and Kaffir Lime Cheesecake
Pre-heat oven to 180 degreesBiscuit Base
250grms/1 packet shortcrust buscuits
75grms butter
Blend butter and buscuits together until the consistancy of wet sand,
Grease cake tin, cover base of cake tin with biscuit mixture and push down well.
750grms Cream Cheese
1 Vanilla bean or 2 teaspoons Vanilla Essence
150grms Sugar
2 eggs
100mls cream
2 Kaffir Limes Juiced and Zest.
Preheat oven to 180
In blender add cream cheese, sugar, seeds from vanilla bean and eggs, mix until smooth. Remove from blender to bowl and mix in cream, then add lime juice. When mixed pour over bisbuit base and bake in oven for 30-40mins or golden on top.
Let cool and serve of refridgerate. Best served at room temperature with cream and fruit.
