Maltese food isn't as well known as other Mediterranean cuisines, but that doesn't mean it isn't just as tasty! Here's a supper dish that is sure to please even the pickiest eaters in your house. You can use pre-made pastry, or if you're feeling extra adventurous you can make your own!
Ingredients:
4 oz (1/2 cup) chopped onion
clove of garlic
olive oil
1 lb ground beef
4 oz chicken liver
6 oz (3/4 cup) peeled tomatoes
2 oz (4 tbsp) tomato paste
Salt and pepper
½ cup water
1.5 lb macaroni
2 hard-boiled eggs
2 oz (4 tbsp) grated Parmesan cheese
1 ½ lbs short (flaky) pastry dough
4 eggs, beaten (for egg wash)
1. Fry the onion and garlic in olive oil. Add ground beef and liver and brown for several minutes. Add tomatoes and tomato paste. Season with salt and pepper. Let cook for a few seconds, then slowly add water and simmer until meat is tender, about twenty minutes.
2. Meanwhile, boil macaroni, drain and cool. Chop the hard-boiled eggs and add them to the pasta, along with Parmesan cheese and the meat and sauce mixture.
3. Roll pastry into a large greased baking dish. Pour the macaroni and meat sauce mixture in and cover with dough. Press the edges to seal the pastry. Pierce the top with a fork, and brush with egg wash.
4. Bake for about an hour at 375, until the dough is golden-brown. Serve hot or cold with grated Parmesan cheese.
