I think we all know "The King," Elvis Presley, loved peanut butter and banana sandwiches. Most of us have heard the stories of his favorite late night snack. Now I love both of those items but I do not enjoy them as sandwiches. However, there are other quick and easy ways to enjoy bananas if you do not love "The King's" sandwiches! Try this quick and easy recipe for Mary's Banana Muffins. Then wash the muffins down with one of these delicious shakes; Pineapple-Banana shake or Banana-Mocha Shake.
BANANA-MOCHA MILK SHAKE
3 medium bananas
2 cups (1 pint) coffee ice cream
1 cup milk
1/4 cup chocolate syrup
Peel bananas and place in a blender container with the ice cream, milk, and chocolate syrup; process 1 minute or until smooth--stopping to scrape down the sides. Pour into 4 chilled glasses and serve immediately.
Yield: Four servings
PINEAPPLE BANANA SHAKE
1/3 cup pineapple juice
1/3 cup low-fat milk
1/3 cup frozen vanilla yogurt
1/2 ripe banana, peeled & sliced
1/2 tsp vanilla extract
Combine all ingredients in a blender container and blend until smooth.
Yield: 1 serving or double the recipe to serve two.
MARY'S BANANA MUFFINS
1 egg or 1/4 cup egg substitute
1 cup mashed bananas
2 cup biscuit baking mix (such as Bisquik)
1/4 cup sugar or 1/4 cup Splenda granular for diabetics
2 tbsp milk
2 tbsp canola oil
Preheat oven to 400 degrees. Grease the bottoms only of 12 muffin cups or use paper muffin liners.
Beat the egg slightly; stir in the bananas, baking mix, sugar, milk, and oil just until moistened. Evenly divide the batter among the 12 muffin cups. Bake at 400 degrees for 15 to 17 minutes.
Yield: Twelve muffins
