There's no need to give in and run through the fast-food drive-thru when you make make a healthy meal at home quickly and easily. Start with this recipe for Honey Pecan Chicken Breasts made with crushed cereal, honey and chopped pecans. Add Microwave Zucchini Casserole as a healthy side dish that's chock full of veggies and is ready in minutes.
HONEY-PECAN CHICKEN
2 tbsp lite soy sauce
2 tbsp honey
2 cups wheat cereal squares, crushed
1/3 cup finely chopped pecans
1 tsp salt
3/4 tsp pepper
6 skinless boneless chicken breast halves
Vegetable oil cooking spray
Preheat oven to 425 degrees. In a small shallow bowl, stir together the soy sauce and honey; set aside. Line a baking sheet with sides with aluminum foil and spray with the vegetable oil spray; set aside. Combine the cereal crumbs and pecans in a pie plate or shallow dish. Sprinkle the chicken breasts with the salt and pepper. Dip chicken in the honey mixture then dredge in the crumbs mixture to coat. Place chicken on the prepared baking pan. Bake at 425 degrees for 15 to 20 minutes or until chicken is cooked through.
MICROWAVE ZUCCHINI CASSEROLE
1 large tomato
6 large slices zucchini
1 celery stalk
1/2 stick oleo
2 large slices of yellow onion
1 large green bell pepper
salt to taste
pepper to taste
Into a bowl, cut all the vegetables into 1/2-inch pieces. Add salt and pepper as desired. Melt oleo in a casserole dish in the microwave. Stir the vegetables in and toss to coat well. Cover the dish. Cook in the microwave on high until vegetables are tender, about 8 to 10 minutes.
Yield: 4 servings
