What is the one recipe that everyone wants for those cold winter days? You guessed it, chili. Chili is one of the most favored recipes for those that are required to endure those long, frigid months during the winter. After all, theres nothing better that having a hot bowl of chili to warm you up after a long day of work in the cold air. One of my favorite types of chili is chicken chili which is really easy to make and is perfect for those on the go are in need of a quick hot meal. In just a few simple steps you too can enjoy the great hardy taste of chicken chili. Just follow these tips and youll be enjoying your very own chicken chili today.
Lets start off buy gathering up all of the necessary tools and ingredients that are needed for this recipe. Here is what you will need: 8 cups of chopped yellow onions, which equates to about 6 onions, 1/4 cup of olive oil and a little extra to be added with the chicken, 1/4 cup minced garlic (8 cloves), 4 red bell peppers, cored, seeded, and large-diced, 4 yellow bell peppers, cored, seeded, and large-diced, 2 teaspoons chili powder, 2 teaspoons ground cumin, 1/2 teaspoon dried red pepper flakes, or to taste, 1/2 teaspoon cayenne pepper, or to taste, 4 teaspoons kosher salt, plus more for chicken, 4 cans (28-ounce each) whole peeled plum tomatoes in puree not drained, 1/2 cup minced fresh basil leaves, 8 split chicken breasts, bone in, skin on, and freshly ground black pepper.
When youve got the ingredients ready for the chili, you can start by sauting the onions for about 15 minutes until they are clear. This is how you know when they are cooked enough. Next, add the garlic, bell peppers, chili powder, cumin, red pepper flakes, cayenne, and salt and continue to saut for another 5 minutes or so. While these ingredients are cooking, chop up the tomatoes and then add them to the pot with the basil. You can then add all the ingredients except for the chicken and then simmer for about 30 minutes.
Prepare the chicken be lightly coating it with oil and season to your liking. Youll want to place the chicken on a baking sheet in cook it in the oven at 350 degrees for about 30 to 40 minutes until it falls off the bones. When the chicken is complete, separate it and cut it into small chunks and then add it to the pot along with all of the other ingredients. Let it simmer for about 20 minutes and then serve.
