Quick Recipes For Healthy Eating

Healthy eating is important for a healthy living! Here are a few recepies for the health freak people. These are full of nutrients, taste great, and easy to cook too.

1.Bread Salad

Ingredients:

Capsicum-1/2 cup, roasted lightly on the skillet
Bread - 2 pieces, cubed and toasted in the oven till slightly crispy
Tomato - cup, chopped thinly
Cucumber - cup, diced (1 cm)
Feta Cheese - cup, crumbled
Olive oil - A few drops
Salt and pepper- as per taste

Method:

Combine all the ingredients, sprinkle salt and pepper, toss well and keep in the refrigerator for half an hour.

Serve cold.

2. Steamy delight

Ingredients:

Carrots - 1cup, diced
Beans - 1 cup, diced
Mushrooms - cup, chopped
Broccoli - 2 to 3 florets, cut in pieces
Eggs - 1, hard boiled, shelled and sliced in 4 pieces
Butter - tsp
Ginger - 1 tsp, julienned
Water - 2 cups
Lemon juice, salt and pepper - according to taste

Method:

Boil vegetables with water till they become tender but crunchy.
Let the water dry up to trap the nutrients within the vegetables.
Heat the butter in a pan and saut the vegetables for 2 minutes.
Squeeze lemon juice and season with salt and pepper.
Garnish with sliced eggs.
Serve hot.

3. Baked fish with broccoli and cheese:

Ingredients:

Mixed vegetables (Beans, carrot, potato or other seasonal vegetables) - 1 bowl (Washed and diced in small cubes)
Broccoli - 4 - 5 florets, boiled in water separately
Milk - 500 ml
Paprika - tsp
Fish fillet (boneless) - 500 gm
Grated cheese - cup
Breadcrumb - cup
Melted butter - 1 tsp
Corn flour - 1 tsp
Salt and pepper - as per taste

Method:
Boil vegetables in milk to make a soup; add corn flour, salt and pepper; keep aside.
On an oven proof dish, arrange broccoli and fish. Sprinkle soup on the fish and the florets of broccolis.
Pour melted butter and top with bread crumbs, grated cheese and paprika;
Bake at 2200C for about 25 minutes.
Serve hot.


4. Chicken soup with tomato and spinach:

Ingredients:

Chicken - 4 pieces
Spinach - Blanched and chopped
Tomato - 1, diced
Corn flour - 1 tsp,
Ginger-garlic paste - 1 tsp
Salt and pepper - As per taste

Method:

Boil chicken pieces in a bowl
Take them out and put the bowl with the stock back on the fire
Add tomato and spinach.
Stir well; add ginger garlic-paste, pepper and corn flour and lastly the chicken pieces.
Blend thoroughly till it thickens.
Serve hot with toasted bread.

All these will take less than 20 minutes to prepare. Next time you feel like munching some burgers, think twice! Now you have so many healthy options! Happy cooking!
