Candy Recipes that are Quick and Easy to Make

Have you ever wanted to make candy but it just seems like it is too much trouble or you are afraid it won't turn out right?  Here are a couple of recipes for delicious candy that are easy to make, always turn out right and are very tasty.  And the best part is that you won't find these candies in the stores.  Have you ever tasted anything made with sweetened condensed milk that wasn't good?  I didn't think so.  And this fudge will be delicious, too!  Both of these recipes call for peanut butter.  In case you don't know (I didn't until I became diabetic), peanut butter helps to counteract sugar.  So it is an excellent ingredient in candy and cookies.
PEANUT BUTTER BUTTERSCOTCH FUDGE
 
1 pkg (6-oz) butterscotch chips
1 cup peanut butter
1 regular can sweetened condensed milk (ie Eagle Brand)
In the top of a double boiler over hot, but not boiling water, melt the butterscotch chips. Add the peanut butter; stir well to mix and melt the peanut butter. Add the sweetened condensed milk; mix well. Pour into a buttered pan and allow to cool. Cut into small squares once the candy has cooled.
TEXAS COW PATTIES
 
1 stick butter or margarine
2 cups sugar
1/4 cup cocoa
1/2 cup milk
1/3 cup peanut butter
3 cups quick oats
1 tsp vanilla
In a medium saucepan combine the butter or margarine, sugar, cocoa, and milk; heat to boiling over med-high heat and boil for 2 minutes. Remove the mixture from the heat and add the vanilla, peanut butter, and oats. Drop by teaspoonfuls onto waxed paper to cool.
