This recipe for Apple-Walnut Bread is a recipe I pulled together for us diabetics. However, it is good for those watching their carbs, or just trying to eat healthier. It is so tasty, folks won't even realize they are eating "diabetic" bread! Give it a try soon! Great with coffee or a glass of milk. This is a healthy after-school snack for the kids, too. Children and adults can also enjoy this in their lunch box or bag.
LINDA'S APPLE-WALNUT BREAD
1/2 cup butter, softened to room temperature
3/4 cup Splenda granular
1/4 cup sugar*
1 tsp baking soda
2 eggs
2 tbsp buttermilk
1 tsp vanilla
2 cups flour
2 cups peeled, cored, and diced apples
1/2 cup chopped walnuts**
Preheat oven to 350 degrees. Spray a loaf pan with nonstick cooking spray; set aside.
Cream the butter with the Splenda and sugar in a large mixing bowl. Beat the eggs and add to the Splenda mixture; mix in well. Add the buttermilk and vanilla; mixing in well. Add the flour and baking soda to the liquid ingredients and mix until all the flour is absorbed into the liquid. Stir in the apples and walnuts. Pour the mixture into the prepared loaf pan. Make the topping below and sprinkle over the batter before baking.
TOPPING:
2 tbsp all purpose flour
2 tbsp sugar
2 tbsp butter
1 tsp cinnamon
Combine all ingredients in a cup or small bowl. Crumble over the bread batter. Bake at 350 degrees for 1 hour. Cool in pan on a wire rack for several minutes then run a thin knife around the edges before removing from pan.
